Yesterday was my friend Krista’s birthday party. She is big into mixing and creating with food and drinks so I decided to try something new for her birthday cake. I went with a ginger pear cake, since ginger pear is one of her favorite combinations. I followed the recipe, which said it would be enough for a 9x13 pan…lies! It was only enough batter for a 9x9 pan. I decided to just make a second one, even though I had no experience with this cake; it could have been terrible. Well, my mad baking skills worked for me yet again. This cake is awesome. It was moist and spicy, with lots of pears. It was a big hit at the party and I was glad I set aside a piece to take home because it was all gone by the end of the night! I would definitely make this again.
